Ingredients

  • 1 small tinned salmon (you can also use fresh or smoked salmon)

  • 4-5 potatoes, mashed

  • 2 eggs

  • 1 tbsp. butter

  • 2 tsp lemon juice

  • salt and pepper to taste

  • chopped parsley

  • 1 small onion, chopped

Method

  • Preheat oven to 180°C.
  • Drain the liquid off the tinned salmon and mix with mashed potatoes.
  • Whip the egg whites into soft peaks.
  • Add all of the seasoning, flavouring, lemon juice, onions and egg yolks. Mix well.
  • Fold in the egg whites and bake in a greased Pyrex dish for 20-30 minutes.
