Ingredients

  • 1 kg pumpkin cubes

  • 2 large onions, chopped

  • salt and freshly ground black pepper

  • warm water to cover or chicken stock

  • butter

  • olive oil

  • cream

Garnish (optional)

  • cream

  • toasted pumpkin seeds

  • Bacon bits

  • chili flakes

Method

  • In a large saucepan, boil the pumpkin with just enough water or chicken stock to cover it.
  • Liquidize with immersion blender or transfer to a blender in batches with some water until you have your preferred consistency.
  • Serve while hot with cream and croutons.
