Even though pumpkins aren’t in season until fall in South Africa, the Halloween is nonetheless widely celebrated. Good pumpkins are still widely available, so go ahead and whip up a batch of pumpkin muffins. No fresh pumpkins are required, but I recommend using the kind of pumpkin puree usually reserved for baking pies. If you don’t have any on hand, feel free to substitute chopped nuts like almonds or walnuts for the raisins. Also, before baking, you may sprinkle some of these nuts on top of the muffins. Ingredients

  • 1 egg

  • ½ cup milk

  • ½ cup cooked pumpkin puree

  • 50g butter, melted

  • cups flour

  • 2 tsp baking powder

  • ½ tsp ground cinnamon

  • ½ cup castor sugar

  • ½ tsp ground nutmeg

  • ¾ cup seedless raisins

Method

  • Preheat oven to 200°C.
  • Grease 12 deep muffin tins.
  • Beat egg slightly. Stir in milk, pumpkin and margarine. Blend well.
  • Sift dry ingredients and stir into other ingredients just enough to combine. Batter will be slightly lumpy.
  • Stir in raisins.
  • Spoon into muffin tins.
  • Bake for 20-25 minutes.
