Ingredients

  • cups flour

  • ½ cup cocoa powder

  • cup sugar

  • 1 tbsp. baking powder

  • 1/4 tsp salt

  • 1 large egg

  • 1 cup milk

  • 1 tsp vanilla extract

  • ½ cup oil

  • 1 cup chocolate chips, plus more for topping

Method

  • Preheat the oven to 220°C.
  • Line a muffin tray with muffin liners, or grease the muffin tray if you don’t have paper liners.
  • In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder and salt.
  • In a separate bowl whisk together the egg, milk, vanilla, and oil until well combined.
  • Pour the wet ingredients into the dry ingredients and until just combined. Do not over-mix your batter.
  • Fold in the chocolate chips.
  • Scoop the batter into your prepared tray.
  • Bake the muffins for 8 minutes at 220°C then lower the oven temperature to 175°C.
  • Bake until a toothpick comes out clean.
  • Remove from the oven and allow to cool.
