INGREDIENTS

  • 1 1⁄2 cups cake flour

  • 1 cup muesli

  • 1 cup brown sugar

  • 2.5 ml salt

  • 15 ml baking powder

  • 75 ml melted butter

  • 2 large eggs

  • 1 cup milk

  • juice and zest of one whole orange

  • 5 ml vanilla

  • 1 apple, cored and grated

METHOD

  • Preheat the oven to the 170°C and grease a standard 12 portion muffin tray or line with muffin cups.
  • Sift flour, salt and baking powder together in a bowl and stir in the muesli and grated apple.
  • In a separate bowl whisk eggs, milk, orange juice and zest, melted butter and vanilla essence.
  • Gradually add the wet ingredients to the dry ingredients stirring only until combined.
  • Divide the muffin batter in the muffin tray and sprinkle with cinnamon sugar.
  • Bake for 15 minutes at 170 degrees Celsius until muffins are golden and a toothpick comes out clean.
  • Serve with warm with butter and cheese or enjoy as is.
