SALAMI AND EGG MUFFINS RECIPE

The salami may be substituted with bacon or ham if you don’t have any on hand. Spice things up by switching from mozzarella to cheddar or gouda or adding a pinch of paprika or cayenne pepper. INGREDIENTS

  • 6 eggs

  • 12 slices salami

  • 1⁄2 cup grated cheese, mozzarella or cheddar

  • salt and pepper to taste

METHOD

  • Preheat your oven to 160°C.
  • Spray and cook or grease your muffin pan. A silicon or non-stick muffin pan works best and is much easier to clean.
  • Line muffin cups with two slices of salami – overlap the two pieces slightly to form a basket for the egg.
  • Add some mozzarella cheese to each “basket”.
  • Crack in an egg and season with salt and pepper.
  • Bake in preheated oven for 20mins or until cooked to your liking.
