When it comes to dessert, everyone goes a little bit crazy over chocolate. There’s a plethora of chocolate desserts you can create, and every once in a while, you’ll find one that’s suitable for serving at a formal dinner. These chocolate custards are similar to crème brulee, but without the caramelised sugar topping. Every guest will have enough to eat, whether you’re having an elegant dinner or a holiday braai.

You’ll be able to make handmade custard, and if you leave off the chocolate, you’ll have a versatile base for various dishes. Eggs need to be tempered before being added to the boiling milk mixture. The eggs will need to be brought up to the same temperature as the hot liquid so that they don’t scramble. You may eat them warm from the oven, but they also make a great base for a variety of other desserts, such as chocolate sauce, mousse, whipped cream, almonds, and fruit.

INGREDIENTS

  • 1 cup milk

  • 1 cup pouring cream

  • 100 g high-quality dark chocolate, broken into small pieces

  • 4 egg yolks

  •  cup brown sugar

  • 1 tsp vanilla extract

  • canned fruit or fresh fruit, to serve

METHOD

  • Preheat oven to 150°C.
  • Combine milk and cream in a saucepan over medium heat. Cook, stirring constantly, for 5 minutes or until hot (do not allow to boil). Remove saucepan from heat. Add chocolate and stir until smooth.
  • Whisk egg yolks, sugar and vanilla in a heatproof bowl until well combined.
  • Add a few teaspoons of the warm milk liquid into the eggs and whisk together until combined and still smooth before slowly adding the rest of the liquid and continuously whisking.
  • Pour custard into four lightly-greased, 34 cup capacity ovenproof ramekins. Place in a deep baking tray. Pour boiling water into baking tray until halfway up sides of ramekins.
  • Bake custards, uncovered, for 45 min.
