BAKED MEATBALLS RECIPE

Cooked with potato pieces and cheese, these meatballs are then grilled to a golden brown. There’s a wonderful cheese pull in every mouthful, along with all the other textures and flavors you’d anticipate.

BAKED MEATBALLS TIPS

Over-mixing the meatballs might make them too dense, so be careful not to do that. Crushed corn flakes may be substituted for the flour to make the balls airier and more enjoyable to eat. The addition of the potato chips to the baking pan is a fantastic touch. Make some spaghetti or other pasta and top it with these meatballs, or eat them on their own with a green salad.

INGREDIENTS

  • 800 g minced meat

  • 1 egg

  • 1⁄2 cup cooked rice

  • 1 cup finely chopped onions

  • 1⁄2 tsp white pepper

  • 1 tsp ground coriander

  • 1⁄2 tsp nutmeg

  • 1⁄4 tsp cloves

  • 1 tsp salt

  • 1 tsp Ina Paarman’s rosemary & olive spice

  • 4 peeled potatoes

  • 410 g tin of tomatoes of your choice

  • olive oil

  • cheese

  • butter

METHOD

  • Slice the potatoes very thinly, drizzle with olive oil and salt and set aside.
  • In a bowl, combine all the ingredients.
  • Do not overmix! The trick to keeping meatballs tender and juicy is not to overmix when you combine the ingredients. Overmixing makes them tough so only stir just until combined!
  • In a prepared oven dish, place the meatballs and add in the tomatoes.
  • Arrange the potato slices to your liking and put a dollop of butter on each meatball. Sprinkle with mixed herbs or the rosemary and olive spice.
  • Place in preheated oven for 45 minutes.
  • Remove from oven and turn on the grill. Sprinkle grated cheese on each meatball and put under the grill until golden in colour. Let the pan rest for a few minutes and then serve.
