Ingredients

  • 4 tbsp. butter

  • 4 tbsp. flour

  • 225 g cheddar cheese, grated

  • 1 large onion, grated

  • 2 tsp salt

  • freshly ground black pepper

  • cups milk

  • 1 pinch nutmeg

  • potatoes, cooked and diced

  • carrots

  • peas

  • broccoli

Method

Bechamel/white sauce

  • In a small saucepan, melt the butter and flour together until flour smell goes away, whisking continuously.
  • Slowly add milk while whisking, making sure that it doesn’t boil. Add nutmeg and a pinch of salt.
  • Add the cheese and melt in the sauce. Cook and whisk until thick. Season well.

Assembly

  • Put your vegetables in a well buttered dish. Cover with cheese sauce and bake at 180°C until browned.
