Ingredients

  • 2 cups boiled pumpkin

  • 1 egg

  • 2 tbsp flour.

  • 2 tsp bicarbonate of soda

  • ½ cup brown sugar

  • 1-2 tsp ground cinnamon

Method

  • Drain the pumpkin well and mash.
  • When quite cool, add the other ingredients to make a soft batter.
  • Drop spoonfuls of melted butter into a flat pan, fry, turn and fry the other side, until golden brown.
  • Serve very hot with lemon juice and a sprinkling of sugar and cinnamon (1 teaspoon cinnamon to 1/2 cup sugar).
