Use apples with a good bite, such Granny Smiths, Pink Ladies, or Galas. If you want to avoid mushy results, don’t use red or Golden Delicious apples. If you like, you may omit the raisins. A large dollop of ice cream or heavy cream is the perfect accompaniment to warm apple pie.

Ingredients

  • 1 roll puff pastry

  • 2 apples (cored and unpeeled)

  • 1 tbsp. lemon juice

  • cup brown sugar

  • 4 tsp ground cinnamon

  • ¼ cup raisins (optional)

Method

  • STEP 1
  • Pre-heat oven to 200°C. Grease and flour a spring-form round cake pan. (If you don’t have a springform pan, line the cake pan with baking paper)
  • In a small bowl mix together the brown sugar and cinnamon. set aside.
  • Remove the core from the apples, but do not peel. Cut into quarters and thinly slice the apples.
  • Place the apples in a bowl and add the lemon juice and mix.
  • Once all the apples have been sliced, coat them in the cinnamon sugar mixture.
  • STEP 2
  • Roll out the puff pastry. Cut a circle about 10cm larger than the pie pan.
  • Cut the remaining pastry into strips and set aside.
  • Place the cut circle in the prepared pie pan.
  • STEP 3
  • Place a few apple slices around the border of the pastry.
  • Then add a strip of pastry around the apple slices.
  • Repeat with a layer of apples around the edge, followed by a strip of pastry.
  • Repeat this process until you reach the middle.
  • Bake at 200°C for 15 minutes then lower the temperature 180°C for approximately 15 minutes or until golden brown.
  • When complete, let it cool before cutting into it.
