Casseroles are nothing new, but you haven’t probably had this cheesy beef and mushroom pie before. The components for tonight’s easy dinner are undoubtedly already in your cupboard and refrigerator.

You may use either fresh or canned mushrooms; however, fresh are preferable, and frying them beforehand will reduce the amount of liquid in the pie. Imagine preparing meatloaf, but making the crust denser so that it forms a better covering. Before you sprinkle on the cheeses, top your beef and mushroom pie with a few more mushrooms, green peppers, and olives. When it’s done in the oven, it’s golden brown, cheesy, and wonderful.

Ingredients

For the meat crust

  • 500g minced beef

  • 125ml skimmed milk powder

  • 30g wheatgerm, breadcrumbs or cornflakes

  • 1 tsp salt

  • freshly ground black pepper

  • 1 clove garlic, finely chopped

  • 250ml chicken or beef stock

  • 1 egg

For the filling

  • 100g grated cheddar cheese

  • 1 small tin tomato paste

  • 100g fresh mushrooms

  • 25ml water

  • 1 pinch salt

  • 1 tsp thyme

  • 20g sugar

  • 1 onion, chopped

  • 50g grated parmesan cheese

Optional toppings

  • green pepper rings

  • olives

Method

  • Combine the first 8 ingredients (for the meat crust) and press into a greased pie dish to form a “meat crust”.
  • Mix remaining ingredients except parmesan cheese.
  • Spoon mixture into meat crust, sprinkle with cheese and garnish with olives or green pepper rings
  • bake at 180° C for 40-50 minutes.
