INGREDIENTS

  • 2 large eggs

  • 1 cup milk

  • 2 cups chicken breasts cut into one inch chunks (one breast cut into half makes about 15/16 nuggets)

  • ¾ cup flour

  • ¾ cup breadcrumbs (or Southern style coating)

  • 2 tbsp. sugar

  • 2 tsp salt

  • 1 tsp chicken spice

  • 1 tsp chilli powder or paprika

  • 6-8cm oil to fry

METHOD

  • There are several steps to follow when making homemade chicken nuggets. Firstly, to make fine breadcrumbs, you can either use a rolling pin or a food processor. However, if you are using Southern Fry coating, this step can be skipped.
  • Next, beat eggs and milk in a bowl and add chicken chunks to the mixture. Let this sit in the fridge for 5-10 minutes.
  • After that, mix flour, breadcrumbs, spices, sugar, and salt together. Remove the chicken mixture from the fridge and cover the nuggets with the flour mixture. Place the coated nuggets on a tray and keep it in the fridge for 5 minutes.
  • While the mixture is in the fridge, heat oil on the stove. Make sure the oil is hot enough to bubble when a piece of chicken is dropped in, but not hot enough to burn it. Fry the nuggets in batches so they don’t stick together for about 6-8 minutes until they turn golden brown. Be careful not to fry them for too long, or they will dry out.
  • Finally, place the fried nuggets on a tray with a paper towel to drain the oil. You can serve them as they are or with chips, veggies, and sauce of your choice.
