In just a few minutes, you can have a batch of your own sweet and tangy homemade BBQ sauce. Add some chilies if you want a spicier sauce. Chips like Doritos tend to become soggy fast, and you can’t make nachos without hard chips to scoop everything up with. Serve with plenty of toppings, including guacamole and slightly melted cream cheese.

INGREDIENTS

  • For the BBQ sauce
  • 2 cups tomato sauce

  • ¼ cup brown sugar

  • ¼ cup apple cider vinegar

  • 1 tbsp. honey

  • 1 tbsp. Worcestershire sauce

  • 1 tbsp. lemon juice

  • 1 tbsp. garlic powder

  • 1 tsp cumin

  • 1 tsp black pepper

  • salt to taste

  • For the chicken nachos
  • 4 chicken fillets

  • 1 packet nacho chips

  • ½ cup cheese

  • sour cream (optional)

METHOD

  • For the BBQ sauce
  • Add all the ingredients into a large saucepan and whisk together.
  • Heat over medium heat until the sauce begins to simmer. Reduce the heat and allow to simmer for 10 minutes.
  • While the sauce is simmering you can prepare your nachos.
  • BBQ chicken nachos
  • Preheat oven to 180°C.
  • Heat oil in a frying pan. Cook the chicken fillets for 4 minutes on each side until cooked through.
  • Remove the chicken from frying pan. Using 2 forks, shred the chicken into strips.
  • Add the BBQ sauce to the chicken and mix well.
  • Layer nachos in a baking dish and top with BBQ chicken and cheese.
  • Bake in preheated oven for 10 minutes or until the cheese has melted.

NOTES

  • Serve with sour cream and quacamole (optional)
