PORTUGUESE-STYLE PERI-PERI CHICKEN RECIPE

INGREDIENTS

  • 1 whole chicken, cut into its portions

  • 1 bottle Nando’s Peri Peri sauce (use your faovurite flavour)

  • salt to taste

  • 1 tbsp. chili powder

  • 2 sprigs thyme

  • 1 tbsp. chicken spice

  • 1 tbsp. red chili flakes

  • ¼ cup plain yoghurt

  • 1 tsp garlic powder

  • 2 tsp ginger & garlic paste

  • 1 tsp cumin powder

  • 30 ml vegetable oil

  • 250 ml fresh cream

METHOD

  • Season the chicken with salt and pepper before letting it rest in the fridge for at least an hour. This will give it a crispier skin and season the chicken properly.
  • Place the whole or portioned chicken on a rack in a roasting tray.
  • Roast in a 180°C oven for 45 minutes to an hour.
  • Remove from the oven and pour over your sauce before putting it back and roasting for another 10-15 minutes.
  • The extra sauce is great for serving with rice.
