INGREDIENTS

  • 2 cups cake flour

  • 1 tsp baking powder

  • 2 tsp bicarbonate of soda

  • ¼ tsp salt

  • ½ cup cocoa powder

  • 2 cups sugar

  • ½ cup oil

  • 1 cup buttermilk

  • 1 cup strong coffee

  • 1 tsp caramel essence

  • Chocolate fudge icing
  • ¼ cup sugar

  • 50 ml hot water

  • 3 TBS butter or margarine

  • ¾ cup icing sugar

  • 3-4 tbsp. cocoa powder

  • 1 tsp caramel essence

  • 3-4 squares melted white chocolate (optional)

METHOD

  • To make these delicious cupcakes, start by lining a muffin tray with cupcake liners or spraying it with cooking spray. Preheat the oven to 180°C.
  • Sift together all the dry ingredients, stir in the sugar, and make a well in the center. Add in all the liquid ingredients and whisk lightly to ensure there are no lumps. Spoon the mixture into the muffin tin until it is about ¾ full. Bake for 20-25 minutes or until a skewer comes out clean. Remove from the oven and let the cupcakes cool before icing.
  • For the chocolate fudge icing, place the sugar, water, and butter in a small saucepan. Melt the sugar and bring it to a boil, then remove from heat and allow it to cool slightly. Add the essence. Sift the cocoa powder and icing sugar together and pour in the cooled liquid. Beat the mixture until it thickens. Spread the icing over the cooled cupcakes.
  • If desired, you can pipe stripes across the top with melted white chocolate and run a toothpick across them in alternate directions to give your cupcakes a delightfully feathered look. Alternatively, you can simply drizzle the white chocolate over the cupcakes.
