If you’re South African, you’ve probably eaten a beef roast from grandma’s after it’s been in the oven for a while, and this dish is the perfect way to mix those two tastes.

SOUTHERN-STYLE BEEF BRISKET SUGGESTIONS

A dry rub is used to season this brisket in a manner that penetrates the meat and adds to the crust. It’s slow-cooked in the oven for around 4 hours, but the results are juicy, flavorful beef that complements any side dish. Make gravy or use as a dipping sauce for mashed potatoes, coleslaw, broccoli and cauliflower bake, or even baked beans and sweet corn with any leftover BBQ sauce. You get to choose, and no matter what you do, the outcomes are spectacular.

SOUTHERN-STYLE BEEF BRISKET RECIPE

INGREDIENTS – DRY RUB

  • brisket, deboned

  • 2 tbsp. salt

  • 2 tbsp. paprika

  • 1 tbsp. garlic salt

  • 1 tbsp. cumin

  • 1 tbsp. black pepper

  • 1 tbsp. sugar

  • 1 tbsp. dry mustard

  • 1 bay leaf, crushed

  • 1 cup beef stock

  • INGREDIENTS – BARBEQUE SAUCE
  • 500 ml tomato sauce

  • 100 ml Worcestershire sauce

  • 75 ml lemon juice

  • 2 tbsp. vinegar

  • 4 tbsp. brown sugar or honey

  • 1 tsp mixed herbs

  • 1 tsp Tabasco sauce

METHOD

  • For the dry-rub
  • Preheat oven to 160°C.
  • Make dry rub by mixing all the ingredients together in a small bowl.
  • For the BBQ sauce
  • Simmer all the sauce ingredients in saucepan for 15 minutes until the sauce thickens and reduces.
  • For the brisket
  • Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered for 1 hour.
  • Add the beef stock liquid and half of the barbecue sauce. Cover the pan tightly with tin foil and place back in the oven.
  • Reduce oven heat to 150°C and cook for 3 hours or until the brisket is fork-tender.
  • To finish off, grill under hot grill for a few minutes to crisp the top.
