A quick and easy meal is one that requires less than ten minutes of prep time and can be left in the oven while you go about your day. It’s possible that you already have all of the ingredients on hand to make beef stroganoff pasta, a popular Russian meal. It’s a thick and creamy pasta dish that’s ideal for evenings spent snuggling up with your family watching your favourite shows.

Instead of tomato puree, you may use canned tomato pieces, and if you’re not cooking pasta, you can reduce the amount of water in the pot by a cup. Green peppers, when added to the onions at the beginning and finely diced, offer an additional flavour depth. Return the pasta that has been drained to the stroganoff and stir to combine for the best flavour. Sprinkle generously with freshly ground black pepper and finish with a splash of fresh lemon juice before serving.

Ingredients

  • 1kg beef mince or strips

  • 2 tins tomato puree

  • 2 cups water or stock

  • 2 onions, chopped

  • 2 cloves garlic, minced

  • 2 tbsp. sugar

  • 4 tbsp. Worcestershire Sauce

  • 1 cup dry red wine

  • 1 cup sour cream

Method

  • Brown the meat in a heavy pot or large saucepan. Set aside.
  • In the same pot, fry the onions until soft. Add garlic and cook for 30 seconds to one minutes.
  • Add the meat back with the tomato puree, sugar, wine, and water (or stock)
  • Season well with salt and black pepper.
  • Simmer, uncovered for 45 minutes to an hour.
  • Cook your pasta in salted water as per instructions. Don’t overcook as they will cook more with the rest before serving.
  • Just before serving, add sour cream and pasta into the pot and warm through.
