Tagliatelle stands out among the different kinds of pasta because it is as entertaining to say as it is to eat. Our chicken tagliatelle is very soothing because of its rich, creamy texture and flavour quality.

Both fresh and dried pasta are acceptable, however fresh tagliatelle cooks more faster than dry. The white sauce, also known as bechamel, is simple to prepare and may be made ahead of time. Practically everything is prepared independently before being combined with pasta water for binding. You may also season each dish liberally with black pepper and serve with a light green salad.

In the winter season, nothing beats a warm bowl of pasta. Every day of the week is a good day for a big bowl of cheesy chicken tagliatelle pasta with the family.

Ingredients

  • 250 g tagliatelle

  • 1-2 cloves garlic

  • 1 tbsp. flour

  • 1 tbsp. butter

  • 1 cup milk

  • 4 chicken thighs

  • onion

  • 1 clove garlic

  • 2 strips streaky bacon parmesan cheese

  • freshly ground black pepper

Method

  • Cook tagliatelle in fast boiling salted water as per instructions on packet.
  • Cook chicken and cut into cubes.
  • In the same pot or pan, chop onion finely and crush garlic. Saute together in hot oil.
  • Cook the bacon until crisp and cut into small pieces.
  • Make a white sauce by melting the butter, adding the flour and mixing it to a smooth paste.  Remove from heat and add milk.
  • Stir well to prevent lumps.  Return to heat and cook until thickened. You want to see streaks that stay there for a bit in the sauce as you whisk.
  • Save some pasta water before draining the rest.
  • In a preheated saucepan, mix the sauce and pasta together and add a bit of pasta water.
  • Add to a serving bowl, generously sprinkle with parmesan cheese.
  • Serve with slices of tomato, green salad and crispy bread rolls.
