Ingredients

For the pancakes

  • 125g flour

  • 2 eggs

  • 1 cup milk

  • 1 pinch salt

  • 1 tsp melted butter

For the filling

  • 370g large prawns

  • 455g mussels

  • 1 tin crab meat

For the sauce

  • 40g butter

  • 40g flour

  • 425ml milk

  • 145g grated cheese

  • salt

  • pepper

  • paprika

Method

  • Mix the ingredients for th pancakes and leave to stand for 2 hours.

for the filling

  • Cook and shell the prawns.
  • Open the mussels and let them cook before removing from the shells.

Bechamel/ white sauce

  • Melt the butter and flour until flour smell goes away. Slowly add the milk and whisk continuously.
  • When it thickens, add the cheese, salt, pepper and paprika. Whisk until thick.

Pancakes

  • In a warm pancake pan, add a ladle of pancake batter and let it spread out into a thin crape and brown on both sides.
  • Put fillinginto each and roll up.
  • Place into greased ovenproof serving dish.
  • Bake in 180°C for 10 minutes.
