Ingredients

  • 1 tsp honey

  • 250g melted butter

  • 1 tsp bicarb

  • 1 egg, beaten

  • 1 cup coconut

  • 1 cup whole-wheat flour

  • 1 cup soft brown sugar

  • cups rolled oats

  • ½ cup wheatgerm, or shelled sunflower seeds (or another cup oats)

Method

  • Soften the butter and add bicarb and the beaten egg.
  • Add the rest of the ingredients and mix well.
  • Press into 2 Swiss roll pans and bake at 180°C for 15 minutes.
