Ingredients

Shortbread base

  • 100g butter

  • 30g castor sugar

  • 150g flour

  • 1 tsp ground ginger

Icing

  • 4 tsp icing sugar

  • 1 level tsp ground ginger

  • 3 level tsp syrup

Decoration

  • flaked almond

  • whipped cream

  • strawberries

Method

  • Cream butter and sugar, work in flour and ginger.
  • Spread onto Swiss roll tin.
  • Bake at 160°C until golden brown which is about 35 minutes.

For the icing

  • Melt butter and syrup over gentle heat. Add icing sugar and ginger.
  • Pour over slab while both are still warm.
  • Sprinkle with almonds.
