INGREDIENTS

  • 4-8 banger-sized sausages (cocktail sausages are better for parties)

  • 4-8 strips streaky bacon

  • Any seasonal fruit, such as green mango, nectarine, peach, pineapple or pear (you can even use canned fruit)

METHOD

  • To prepare the fruit-filled sausages, start by making an incision down the length of the sausages, being careful not to cut all the way through.
  • Next, cut the fruit into strips. Fill the sausages with the fruit pieces and wrap bacon strips around the sausages to finish (you can also use baby marrow slices or a similar option), securing everything with a toothpick.
  • To cook the sausages, grill or fry them over medium heat for 15-20 minutes, turning occasionally to get an even, golden look.
  • For an extra burst of flavor, serve the fruit-filled sausages with apple or mustard sauce.
