Sausages and boerewors are particularly delicious when chopped into little pieces and used as a garnish for a dish made using leftovers. It’s easy to whip up some sweet and sour syrup at the same time you’re preparing your fresh sausages. The sauce goes well with the sausages, but it really shines when paired with some creamy mashed potatoes. Add some chilli flakes to the sauce if you like things on the spicy side.

Ingredients

  • 1kg beef sausages or sectioned boerewors

  • 1 green pepper

  • 1×400g tinned pineapple chunks

  • 100ml vinegar

  • 40ml tomato sauce

  • 2 medium carrots, sliced

  • 2 onions

  • 40ml brown sugar

  • 30ml Maizena

  • 12.5ml soy sauce

  • salt and black pepper

Method

  • Cook sausages until brown in a pan or on the braai.
  • Place carrots, chopped onion, salt, pepper and some water into a pan. Simmer for 10 minutes or until tender. Drain and pix with drained pineapple chunks.
  • Add 500ml water and simmer to a sauce consistency.
  • Heat syrup, vinegar and tomato sauce until boiling. Mix Maizena with cold water and add to the syrup. Boil for a few minutes and reduce.
  • Add soy sauce and vegetables.
  • Add the sausages back and heat through.
  • Serve with mashed potatoes.
