Strawberry shortcakes recipe

Does baking make your heart sing? Having breakfast with your favourite people? Why not bake something delicious to share? Mini strawberry shortcakes, or pastries in general, are the way to go. They have the appearance of scones, but the short pastry is so buttery and light that it melts in your mouth as you bite into it to reveal the smooth filling within. The strawberries give more than just a pop of colour; their signature sweetness is irresistible.

You may serve your shortcakes in a few different ways. Put them in muffin pans or bake them and then split them apart like scones. But if you’re using muffin pans, fill them halfway with rice or baking weights to keep the muffins from rising too much. You may either construct gorgeous open delights with the filling and fresh strawberries on top, or you can make sandwiches with the filling. No matter how you decide to top them up, the creamy filling and flaky pastry will be delicious.

Ingredients

  • 250g self-raising flour

  • ½ tsp salt

  • 90g butter

  • 30g castor sugar

  • 1 egg

  • 4 tbsp. milk

  • milk to glaze

  • For the filling
  • 250ml double cream

  • 1 tbsp. icing sugar, sieved

  • 250g strawberries, hulled

Method

  • Sift together flour and salt and rub in butter. Beat the egg with the milk. Add sugar and mix to a soft, but not sticky, dough with egg and milk.
  • Turn out on to a lightly floured table, knead quickly until smooth, then roll out to 1cm thickness. Cut into 6 rounds with a plain cutter.
  • Place on a greased baking tray and brush tops with milk.
  • Bake in a 200°C oven for 10-12 minutes.
  • Cool on a wire tray but, whilst still warm, split each shortcake in half by pulling carefully apart and not cutting with a knife.
  • To serve, slice strawberries keeping 6 whole for decoration.
  • Sandwich shortcakes together with cream and sliced strawberries.
  • Dust tops with icing-sugar and decorate serving plate with whole strawberries.
