Ingredients

  • 8 chicken pieces

For the sauce

  • 30 ml tomato paste

  • 30 ml Worcestershire Sauce

  • 30 ml chutney

  • 10 ml curry powder

  • 30 ml olive oil

  • 10 ml mayonnaise

Method

For the sauce

  • Mix the sauce ingredients together, taste for seasoning and add salt and pepper if needed.
  • In the bowl, coat the chicken pieces properly.
  • Place the chicken pieces in a lightly oiled baking tray or oven-proof casserole dish.
  • Cover with foil or the lid and bake at 180°C for about 45 minutes.
  • Remove the cover and bake for another 20-30 minutes to give the chicken some colour.
