Even though ham and butter are called for in the recipe, you may easily substitute in your preferred meat and dairy free options. The mushrooms provide a meaty texture, and al dente pasta adds its own dimension if cooked properly. Baby marrow, carrots, and green bell peppers are just some of the veggies that would taste great in this sauce. Place it in the centre of the table in a large serving dish suitable for a large group, and sprinkle liberally with freshly ground black pepper before serving.

Ingredients

  • 300g spaghetti

  • salt and pepper

  • 30g butter

  • 1 onion

  • 30g plain flour

  • 500ml water

  • 2g tomato puree

  • 1 tsp dried herbs

  • 180g ham

  • 150g mushrooms

Method

  • Cook the spaghetti in a large saucepan of salted, boiling water for 10 minutes or until soft. Drain and keep hot.
  • Melt butter in a large pan. Peel and finely chop onion and fry until transparent.
  • Add flour, mix well and cook for 2-3 minutes. Remove pan from heat and gradually add the water. Return to heat and add tomato puree and herbs. Bring to the boil, stirring all the time until thickened.
  • Chop ham roughly and add to sauce. Slice mushrooms and add to sauce. Season to taste. Cook gently for 5-10 minutes.
  • Put spaghetti in large serving dish, pour sauce over, toss and serve very hot.
