Chicken, because to its mild flavour, makes for a versatile food in the kitchen. Mushrooms, whether in a sauce or fried, work well with both chicken and beef. We put them together with this chicken and mushrooms recipe, which does all of the above. Also, it’s ready in about an hour, so it’s perfect for busy families.

Chicken and mushrooms suggestions

Caramelization of the skin during browning adds flavour to the chicken and to the pan. If you’d like, once the onions have cooked, you may deglaze the pan with white wine. A lot of black pepper and other seasonings would be excellent in the mushroom sauce. In addition to a refreshing salad, fry some chips in oil or an air fryer.

Ingredients

  • 4 chicken quarters

  • 90g butter

  • 150g mushrooms, sliced

  • 1 small onion, chopped

  • 1 litre stock

  • 1 tbsp. tomato puree

  • ½ tsp chopped herbs

  • 1 tsp chopped parsley

Method

  • Season the chicken pieces and fry in butter for 20 minutes or until tender. Add mushrooms and cook for 2-3 minutes. Remove chicken pieces and keep warm.
  • Add the onion to the pan, cook until transparent. Add the stock and boil up, reduce the heat and cook for 5 minutes.
  • Add the tomato puree and herbs. Adjust the seasoning and cook 5 minutes longer.
  • Arrange the chicken on a serving dish and pour the sauce over. Sprinkle with chopped paisley.
