Steak is a popular dish in South Africa, although not all steaks are suitable for a braai. This meat is of the highest quality, however fillet is best fried in a skillet for fast and even cooking. Fillet mignon and other French fillet meals are among the greatest in the world. We put a unique spin on the traditional steak dish by adding cheese, onions, and mushrooms to it. Prepare a gorgeous fillet and serve it with a cheese sauce that has been garnished with onions, shellfish, and mushrooms.

Fillets should be sliced against the grain and quite thick so that they don’t dry out when cooked. Sear in a smoking hot pan, then bast with butter and garlic. It’s not a bechamel, but some fried prawn tails may do the trick in place of the more costly crayfish when it comes to adding flavour to the sauce. Accompany with roasted potatoes and colourful carrots that have been battered and fried.

Ingredients

  • 500 fillet fillet steak or medalions

  • 1 medium onion

  • 4 tbsp. butter

  • 115g strong cheddar cheese

  • 2 glasses sherry

  • 2 tbsp. tomato paste

  • 1 crayfish tail, cooked (prawn tails work too)

  • 125ml cream

Method

  • For the steak
  • In a smoking hot cast iron skilled, seer the steak on one side and when flipping it over, add butter to the pan and baste as it cooks. When done, set aside under foil and let rest.
  • For the sauce
  • Grate the onion very finely and fry in 2 tablespoons of butter.
  • Add mushrooms grated cheese and a glass of sherry with the tomato paste. Simmer until creamy.
  • Add diced crayfish or prawns and the rest of the sherry. Simmer for 5 minutes.
  • Stir in the cream and heat together.
  • Serve over the steak.
