A double boiler, or bain marie, will be used to melt the chocolate. The chocolate is melted in this manner simply by using indirect heat, which prevents it from burning and allows the temperature to be precisely controlled. Use clean equipment to whisk the egg whites, since even a trace of egg yolk can ruin the fluffy peaks. To avoid scrambling the eggs, add the chocolate to the egg yolks very gradually until they are both at the same temperature.

Ingredients

  • 115g dark chocolate

  • 4 eggs

  • cream

Method

  • Break the chocolate into little bits and melt in a double boiler. Remove and cool.
  • Separate the egg yolks from the whites. Beat the yolks well and add slowly to melted chocolate.
  • Beat the egg whites until they form stiff peaks.
  • Then add a little at a time to the chocolate mixture, gently folding in.
  • Pour into a glass bowl and put into refrigerator until set. Serve with cream.
