On a warm day or evening, nothing beats a cool, creamy serving of ice cream in a cone, cup, or bowl. It’s likely, however, that coffee is another passion of yours, and the two may be combined with little effort. This easy coffee ice cream recipe calls for only four basic ingredients and your choice of toppings.

Even if you’re not whipping up a custard or using an ice cream churning machine, you’ll still be whisking quite a lot. Egg whites should be as firm as possible, and the rest of the ingredients should be added very slowly. Crushed nuts provide a fantastic base for other toppings. Before freezing, you may add crushed coffee beans or chocolate chips to the mixture for a unique flavour and presentation. Add some cooked meringue on top for a special treat.

Ingredients

  • 2 eggs, separated

  • 60g icing sugar, sieved

  • 2 tbsp. coffee essence

  • 750ml double cream

Method

  • Whisk egg whites until very stiff, then gradually whisk in icing sugar.
  • Whisk egg yolks and coffee essence together and gradually add into egg whites.
  • Lightly whip cream and, add coffee mixture.
  • Pour into ice cube tray or shallow tin and freeze. This ice cream does not need any further beating.
  • To vary, fold in with the cream 50g finely chopped walnuts,  lightly crushed meringue, or crushed macaroons.
