The tart is finished off with crunch and class when the remaining dough is grated on top. Ingredients

  • 125 g butter

  • 2 tsp oil

  • 1 egg, beaten

  • ¼ tsp salt

  • 2 tbsp. castor sugar

  • ½ tsp vanilla essence

  • 2 cups flour

  • 2 tsp baking powder

Filling

  • 1 egg, beaten

  • 1.5 cups marmalade

  • 1 tsp salted butter

Method

  • Cream butter and sugar, add oil and vanilla essence.
  • Stir in the egg. Add sifted flour and baking powder.
  • Mix into dough and knead well.
  • Spread and press into buttered dish. Leave about a third of the dough for later.
  • Add filling and grate remaining dough over the top.
  • Bake at 180°C for 30 minutes.
