This custard tart recipe is a perfect match for fans of lemon meringue pie (also known as melktert). You can create something fantastic with only a few common kitchen staples and a piece of premade short crust pastry. The tart also allows you to be creative and produce something beautiful.

The short pastry you buy at the store will always be excellent, exactly like puff pastry. It will form a lovely golden crust. As well as crèmes, this combination may be utilised to make a wide range of different desserts. Fill greased cups with the batter and place them in a can of water. Put it in the oven and bake for approximately half an hour. Substitute cinnamon for the nutmeg, or top with a berry combination (blueberries, raspberries, etc.). Accompany a hot cup of coffee or tea with a chilly serving.

Ingredients

  • 200g short crust pastry

  • egg white for brushing

  • 30ml powdered milk

  • 2 eggs

  • ½ tsp vanilla essence

  • ½ sugar

  • ½ tsp nutmeg

Method

  • Roll out pastry to fit a 20cm pie dish. Line the tin and brush base with a little egg white. Prick base and bake in 220°C oven for 10 minutes.
  • Make the powdered milk up to 500ml with water. Add egg, vanilla essence and sugar. Beat well until smooth.
  • Pour in prepared pastry case and sprinkle with nutmeg.
  • Bake in centre of very 160°C oven for 40 minutes or until firm. Cool, remove ring and serve flan very cold.

Notes

  • This mixture can be used for a variety of other sweets like crème for instance. Pour the mixture into greased cups and stand these in a tin of water. Bake in the oven for about 30 minutes.
