It’s simple to make the dough, and if you don’t have candied orange peel on hand, you can substitute a few grates of lemon zest. Instead of honey, you might try adding some finely chopped honeycomb or crushed almonds. In place of more powdered sugar, you may give the loaf a glossy sheen by brushing it with butter or warm honey as soon as it comes out of the oven. Use as a base for French toast, or eat as is.

Ingredients

  • 12g self-raising flour

  • 1 tsp salt

  • 3 tsp mixed spice

  • 60g candied orange peel

  • 120g soft brown sugar

  • 170g clear honey

  • 250g milk

  • For the topping:
  • 30g sugar

Method

  • Line and grease a medium-sized loaf tin
  • Chop the orange peel finely. Sift together flour, salt and spice, mix in peel and brown sugar.
  • Add honey and milk, and blend together until a smooth, stiff dough is formed.
  • Place in loaf tin. Lightly crush the sugar and sprinkle over the top of the loaf. (you can also use powdered icing sugar)
  • Bake for about 75 minutes in a moderate oven.
  • Turn out and cool on a wire tray. A little more sugar can be sprinkled on top of the loaf if you want to.
  • Serve sliced and spread with butter.
