You’ll need a deep dish for a taller slice of this recipe, since it’s more like a cake than a tart, but you may still choose to create a shorter pie if that’s what you prefer. If your layer is very thin, reduce the baking time. If you want even more Holiday flavour, you may add allspice or another spice to the mix. Indulge in the perfect hot/cold contrast with every mouthful of your spice cake by serving it with a mountain of whipped cream or a bowl of ice cream.

Ingredients

  • 2 cups sliced apples

  • ½ cup brown sugar

  • 1 cup white sugar

  • 110g butter

  • 2 eggs, beaten

  • 2-4 tsp ground cinnamon

  • 2 tsp bicarb

  • 1 cup sour cream

  • cups flour

  • mixed nuts, chopped

Topping

  • ½ cup brown sugar

  • ½ cup white sugar

  • ½ tsp ground cinnamon

  • ½ cup chopped nuts

Method

  • Combine shortening, sugar, eggs, pinch of salt, spice and blend until fluffy.
  • Add bi-carb to the sour cream and add creamed mixture and with flour.
  • When all is combined, add the apples.
  • Pour into a round baking pan. Add the combined toppings.
  • Bake in preheated 180°C oven for 45-50 minutes.
  • Serve with whipped cream.
