Coconut may be toasted by spreading it out on a baking sheet coated with parchment paper and placing it in an oven preheated to 160 degrees Celsius for no more than 8-10 minutes. INGREDIENTS

  • 1 tin caramel condensed milk

  • 2 cups desiccated coconut

  • 1⁄2 cup roasted desiccated coconut

  • 10-15 cardamom pods, sliced and deseeded

METHOD

  • Pour the can of caramel condensed milk in a pot over low heat.
  • Stir until smooth. Make sure it doesn’t burn.
  • Add the cardamom seeds and stir for 2 minutes over low heat. The seeds need to heat up to give flavour.
  • Remove from heat and add coconut.
  • Allow to cool for 2 minutes and shape the mixture into small individual balls. Roll the balls in roasted coconut, making sure each one is covered.
