LIME CHEESECAKE RECIPE

Is there a chance you just had a few minutes of electricity and now you have to improvise a dessert for the party? When time is of the essence, a no-bake cheesecake made in the refrigerator is the way to go. The chocolate drizzle on this lime cheesecake makes it the ideal treat to whip up in a hurry. The sweetness and cheesecake-like texture of this delicacy are both largely attributable to the condensed milk used in its preparation. It may be decorated anyway you want without the need of electricity.

LIME CHEESECAKE TIPS

As a matter of fact, Tennis Biscuits and butter make the ideal fast pie and tart crust. The other components come together quickly, and you can even throw in some cream cheese if you choose. Use a double boiler and melt the chocolate in increments, taking care not to overheat it or it will split. Substitute caramel drizzle for chocolate, and add more limes or berries, if you want. Ideally, this dish would be accompanied by a hot cup of coffee or tea.

Unfortunately, a sweet treat is required but baking is out of the question. Save yourself with this refrigerated lime cheesecake topped with chocolate drizzle.

LIME CHEESECAKE RECIPE

INGREDIENTS

  • For the base
  • 1 packet Tennis Biscuits

  • 60 ml melted butter

  • For the filling
  • 400 g milk powder

  • 1 cup cold water

  • 1 tin condensed milk

  • 4 limes, juiced and zested

  • 1 packet Whispers/Chuckles

  • chocolate for melting

  • strawberries for decorating (optional)

METHOD

  • Pulse the biscuits in a food processor until you have fine crumbs. Combine with melted butter.
  • Press the biscuit base into a greased tart tin and refrigerate whilst making the filling.
  • In a bowl, combine the milk powder, water, condensed milk and lime juice until fully incorporated.
  • Stir in half of the grated lime zest (save the rest for the topping). Pour your filling into your base and refrigerate for at least an hour.
  • Decorate your “cheesecake” with the whispers, melted chocolate, strawberries and remaining zest.

NOTES

  • Enjoy this delicious treat as is or with a dollop of whipped cream.
