Another classic summertime addition is this ice cream topped with rum sauce, a simple fruit infusion with a blast of your favourite rum.

To begin, any kind of rum—dark or light—can be used. Decide between the two based on how much you want sweetness or richness. Dates, raisins, and other dark fruits pair well with black rum, while lighter fruits, such berries, complement light rum. You may play around with the proportions and add some crunchy nuts for garnish.

Ingredients

  • 1 cup mixed fruit (raisins, currents, sultanas, etc.

  • cherries

  • mixed nuts, crushed and chopped

  • 1 cup water

  • 15ml rum

  • ¼ cup sugar

  • 1 heaped tbsp. butter

  • Vanilla ice cream

Method

  • Simmer the water, fruit, sugar and butter for an hour.
  • In the last 10 minutes, add the rum along with the cherries and nuts just before serving.
  • Serve warm with vanilla ice cream.
