INGREDIENTS

  • 2 cups rice

  • 1 packet mushroom soup

  • 4 cups boiling water

  • 500 g chicken fillets, cut into cubes (you can also use chicken pieces, add on a little weight to compensate for the bones).

  • 1 onion, cut into chunks

  • assorted vegetables, chopped (for example, butternut, pumpkin, green beans, baby marrows, green pepper, peas)

  • 2 medium potatoes, par-boiled and cut into pieces

  • salt and pepper

METHOD

  • To prepare this dish, start by preheating the oven to 180°C.
  • Next, place the rice at the bottom of an ovenproof dish.
  • On top of the rice, add the meat, onions, potato, and vegetables.
  • Season the ingredients with salt and pepper, but be cautious not to add too much salt since the soup mix already contains a high amount of sodium.
  • You can also add other herbs and spices like paprika to enhance the flavor.
  • The next step is to mix the water with the packet of soup and pour it over the rice and other ingredients in the dish.
  • Cover the dish with foil and place it in the oven to bake for an hour.
  • After about 30 minutes, remove the foil to allow the dish to cook more evenly.
  • Give everything a little mix, then return it to the oven to cook for the remaining 30 minutes.
  • Once it’s done, take it out of the oven and let it cool for a few minutes.
