STICKY BLACK RICE WITH MINT-COATED NECTARINES RECIPE

INGREDIENTS

  • 1 cup black rice

  • 2 cups water

  • 80 g brown sugar

  • ½ cup coconut milk

  • For the fruit
  • 3 nectarines, de-pipped and cut into thin wedges

  • juice of 1–2 limes

  • 1 handful mint, leaves removed

  • 2 tbsp. castor sugar

METHOD

  • Soak rice in cold water for an hour. Rinse well. (Could be done more than once until water is clear)
  • Place in a pot with water, stir, bring to the boil, reduce heat, cover and simmer for about 35 minutes.
  • Stir in sugar and coconut milk, add a pinch of salt and simmer for about 10 minutes. Allow to cool.
  • Meanwhile bash the mint leaves and sugar together until sugar is bright green.
  • Just before serving, drizzle fruit with lime juice then toss to coat in mint sugar.
  • Spoon fruit over cooled black rice and serve.
