Ingredients

  • 1 cup Mediterranean couscous

  • 1 cup boiling water

  • olive oil

Veggies

  • 1 red onion, cubed

  • 1 tomato, cubed

  • ½ cup peppers, cubed

  • ½ carrot

  • 1 tbsp. crushed garlic

Spices

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp lemon pepper

  • 1 tsp cumin powder

  • 1 tsp garlic and herb spice

  • 1 tbsp. brown sugar

Sauces

  • 1 tbsp. Maggie chilli garlic sauce

  • 1 tbsp. Nandos black pepper

  • 1 tbsp. sweet chilli sauce

Method

  • Add the couscous to a bowl. Add the olive oil and boiling water. Cover and allow to steam and double in size for 15 minutes.
  • Sautee all the veggies and then add the spices.
  • Cook for a further 2 minutes, remove from heat and add the sauces.
  • Add couscous to the pan, mix well and serve with chicken.
