INGREDIENTS

  • 4 eggs

  • 250 g bacon

  • 300 g boerewors or sausages of your choice

  • 410 g chakalaka, mild & spicy 

  • sage or any other fresh herb to infuse the bacon

  • salt and ground black pepper

METHOD

  • To begin, place a frying pan with a heavy base on medium heat. Once heated, add the bacon in batches and sauté until cooked.
  • Then, add fresh herbs to the pan and continue frying until the bacon is crispy.
  • After this, remove the bacon from the pan and set it aside for later.
  • Next, add the boerewors to the same pan and fry until it is cooked.
  • Once done, arrange the previously fried bacon around the boerewors.
  • After that, spoon the chakalaka into the pan with the boerewors and allow it to heat up.
  • Make spaces in the chakalaka and carefully break the eggs into these holes.
  • Cover the pan for a few minutes until the eggs are cooked to your liking.
  • Finally, when the eggs are done, season them with salt and pepper to taste.
  • To finish, garnish the dish with fresh herbs and serve immediately.
