Perfectly prepared ribs for a weekend party: barbecue spare ribs


The sun’s out, warming the days and we’re ready for a braai. Other than the usual steaks, boerewors and kebabs, we want ribs. We want juicy, caramelized BBQ spare ribs. The sweet marinade with the high quality ribs you can get locally, you have a feast on your hands, literally. Serve these as one of the options and there will be no clean hands or faces left around the lunch or dinner table.

The orange marmalade helps sweeten the marinade and the sugars will help caramelization in the oven or on the braai. When it’s raining or you forgot the coals, pop these ribs in the oven for a little while. Otherwise, when the sun is out, there’s nothing like some ribs on the open fire. Serve these ribs with some chips or along with the rest of the meat and sides for that weekend braai feast.

Ingredients

  • 1 kg spare ribs

  • olive oil

  • 115 g orange marmalade

  • 3 tbsp soy sauce

  • 1 small onion, chopped

  • ½ tsp garlic powder

  • freshly ground black pepper to taste

Method

  • cut the ribs between each 3rd rib and place in a bowl.
  • In a saucepan, slowly melt the marmalade and soy sauce together. Remove from heat.
  • Fry the onions with the garlic and pepper in the same pot.
  • Combine everything and pour over the meat. Marinade overnight or for 12 hours. (Turn them occasionally)
  • Preheat oven to 180°C.
  • In an ovenproof rack, place the ribs on the rack in the pan and baste.
  • Bake, uncovered, for 90 minutes while occasionally basting and turning once when half-way.
  • You can also put these juicy ribs on the braai.
