Ingredients

  • 250ml softened butter

  • 375ml sugar

  • 700ml sifted flour

  • 2 eggs

  • 2 tsp cream of tartar

  • 1 tsp bicarb

  • ½ tsp salt

Method

  • Mix the butter, sugar and eggs together thoroughly.
  • Sift dry ingredients together and stir into egg mixture.
  • Put dough in the fridge to chill. When chilled, roll dough into balls the size of small walnuts.
  • Roll the balls in mixture of equal parts brown sugar and ground cinnamon.
  • Flatten the balls slightly with a fork.
  • Bake at 200°C for 8-10 minutes until light brown but still soft.
  • Let cool on a wire rack.
