If milk skin develops in the first hour of simmering, just whisk it into the rice with a fork, sprinkle with nutmeg, and keep cooking over low heat for another hour. For this dish, long-grain rice varieties with a high water absorption rate are recommended. Bananas are delicious on their own, and they get much better when you mix in some cashews, almonds, or walnuts for a sweet treat. Spice things up with some cinnamon, and throw in some berries for good measure.

Ingredients

  • 120g Carolina rice

  • 1 litre milk

  • 60g castor sugar

  • 30g butter

  • 1 pinch ground nutmeg

  • Extras
  • sliced banana

  • walnuts or almonds

Method

  • Grease a 2 litre pie dish. Then put in rice, milk and sugar. Stir well and dot the top with butter. Bake in centre of preheated oven for 2 hours.
  • Sprinkle top with grated nutmeg after 1 hour.
  • If a richer pudding is desired, add 1 litre single cream or small tin evaporated milk.
