Countries in the Mediterranean like Greece are aware of this, and in South Africa, we not only have a love of cuisine, but also some of the greatest products. Greek-style lamb chops with mint sauce are a stunning weekend dinner option.

You need some acidity and freshness to cut through all the richness that comes with the fat. When combined with lemon juice, the marinade’s garlic and herbs do a fantastic job of tenderising the meat. The paprika gives it a zing without making it too fiery. A mint sauce, bright and refreshing, is a great complement to lamb or mutton, and you’ll be cooking one. You may throw it on the grill while you’re having a braai, and then serve it with a salad and your favourite sides, followed by a refreshing dessert.

Ingredients

  • 6 lamb chops

  • salt and freshly ground pepper

  • Ingredients – Marinade
  • 2 tbsp. rosemary, chopped

  • 1 tbsp. origanum

  • 1 tsp smoked paprika

  • 2 tbsp. crushed garlic

  • 1⁄4 cup olive oil

  • juice of a lemon juice

  • Ingredients – Mint sauce
  • 40 g fresh mint

  • 4 tbsp. boiling water

  • 2 tbsp. white vinegar

  • 1 tbsp. sugar

Method

  • Season the chops with salt and pepper.
  • Mix the marinade ingredients together and rub over the chops.
  • Allow to stand for 30 minutes to 1 hour in the fridge.
  • Heat olive oil in a frying pan over medium high heat.
  • Cook the chops on each side for 5 minutes, or how you like them done.
  • Method – Mint sauce
  • De-stalk the mint and finely chop the leaves. You can also pop the mint leaves into a blender.
  • Add the mint to a heat proof bowl. Add the boiling water, sugar and vinegar and stir. Allow to stand while you cook the chops.
  • Drizzle the sauce over the cooked chops.
