INGREDIENTS

  • 1/2 cup oil

  • 2 eggs

  • 1 1⁄2 cups brown sugar

  • cups bran

  • 2 1⁄2 cups whole wheat flour

  • 2 cups milk

  • 2 1⁄2 tsp bicarbonate of soda

  • 2 tsp baking powder

  • tsp vanilla essence

  • 1⁄2 cup raisins

  • 1⁄2 cup carrots (grated)

  • 1 cup coconut

  • 1⁄2 cup nuts (optional)

METHOD

  • Preheat oven to 180°C. Line a muffin tray with liners.
  • Mix oil, eggs and brown sugar together, until sugar dissolves.
  • Add bran, flour, milk and baking soda and baking powder, vanilla essence and mix together.
  • Add raisins, grated carrot, chopped nuts and coconut to mixture.
  • Add mixture to muffin tins, make sure the mixture fills the tin about halfway with muffin mixture.
  • Bake for 15 – 20 minutes.
