Ingredients

  • 1.3 g fish (any dense variety)

  • 3 large onions

  • 2 cups vinegar

  • 1 tbsp curry powder

  • 1 tbsp crnflower

  • 2-3 tsp salt

  • pepper to taste

Method

  • Cut the fish into pieces, season and sprinkle with flour.
  • Fry the fish to a golden brown colour.
  • Cut the onions into rings and cook in 1 cup water for 3 minutes.
  • Mix curry, sugar, cornflour, salt, pepper and vinegar. Stir into onions and boil gently for 3 minutes. Allow to cool.
  • Pour over fish with a few lemon or bay leaves in between.
  • Store in air-tight container.
