Green beans pickled in curry are a tangy and flavorful condiment that may be used in a variety of ways. You may also hear this dish referred to as “kerrie boontjies” in Afrikaans. It takes very little time to prepare and may be stored for weeks in the refrigerator.

While green soy beans are the most common, you can use whatever variety you choose. As long as they are cooked until soft, sugar or string beans also work nicely in this dish. If you want to change up the flavour profile, try adding some peppers or garlic in addition to your favourite curry powder. When chilled, your curried green beans are ready to be enjoyed on their own or mixed with another salad.

Ingredients

  • 2 kg green beans

  • 4 tbsp Maizena

  • 2 tbsp mustard

  • 250-500 ml vinegar

  • 2 cups syrup

  • 2 tbsp salt

  • 4 medium onions, chopped

  • 2 tbsp curry powder

Method

  • Cook the beans and onions until tender.
  • Mix all of the dry ingredients together and mix with vinegar.
  • Stir and let simmer for a while.
  • Remove from the heat and add syrup. Mix with beans and onions.
  • Bottle when cold and use as a salad.
