The warm, bright weekend of spring is the perfect time to host a meal for your friends. Though, you’d rather spend your time socialising than in the kitchen. These peri-peri prawns are an excellent example of the many types of seafood that can be prepared quickly and taste wonderful. The prawns are quite light in weight, but they come with a thick and spicy sauce that will leave your taste buds tingling.

This meal may be readily cooked inside, but if you’re entertaining friends and the weather’s nice, a gas bottle and camping skillet can do the job well. Since the peri-peri sauce needs to rest so the flavours can develop, it’s best to make it during the week. For even more vibrancy, throw in some green peppers and onions with the prawns. You may adjust the heat level to suit the tastes of your visitors.

Ingredients

  • 500g prawns, cleaned and deveined

  • butter

  • lemon juice

Peri-Peri Sauce

  • 125ml olive oil

  • 2 cups tomato puree

  • 1 tsp garlic flakes or a few crushed garlic cloves

  • 1 heaped tsp peri-peri powder

Method

For the Peri-Peri Sauce

  • Mix all of the ingredients together.
  • You can blend or just add to a sealable bottle and shake well to mix. Let it rest for 24 hours in the fridge.

Cooking and serving

  • Saute the prawns in the butter for 8 minutes and then add the lemon juice.
  • Add the sauce and cook for another 10 minutes.
  • Serve with rice and green salad.
